THE FOUR-COURSE TABLE.

The shorter sample opens with sourdough, followed by a choice of smoked eggplant–tomato dip, Caprese or zucchini noodles. Swordfish or beef follows, with celery-root purée and charred broccoli. Pistachio panna cotta closes the meal.
